I could get used to this.
I could get used to the idea of baking a cake once a week! Especially since you have shared so many yummy recipes with me and I really look forward to trying them all!
I made Linda's Lemon Pound Cake today for Sunday dinner. Linda is such a sweetie - she reads my blog and has often generously shared her personal recipes with me.
And this one is a winner! It was easy to make, easy to bake, and yes easy to take! ;-) I took some slices to my sister's house and gave some to my neighbors too. I think THAT is my favorite part about baking - the sharing with others. I am sure you agree.
Here is Linda's recipe:
Lemon Pound Cake
Cake
3 cups sugar
1/2 tsp salt
2 sticks butter
1/2 cup crisco
Cream above ingredients together.
Beat in 5 eggs one at a time to above ingredients.
Add:
2 T lemon extract
1 cup milk
3 cups flour
1/2 tsp. baking powder
*Alternate flour and milk
Pour batter into a greased and floured bundt pan
Bake 1 hour or until toothpick comes out clean @ 325 degrees
Icing
Mix together with mixer:
1/2 stick butter
Juice and lemon zest from 2 lemons
1 box of powdered sugar
Spread over cooled cake.

Hi Kim, Lindas Lemon cake looks delish!! I am going to make this but I have 1 problem I don't know what crisco is over here it is an oil manufacturer and I don't think that oil is called for so I will add a little more butter if it needs it to cream, I'm crossing my fingers that it will turn out Ok!!! thanks for your recipe Linda and thanks for sharing the finished product Kim I'm glad that you enjoyed it. Oh my this does look ever-so yummy! I will have to try making this one in my new Kitchen Aid mixer.. I just received the Kitchen Aid as a gift and I'm trying new receips. Thank you Linda for sharing your receipe with Kim.
It really looks delishous..and my husbands loves lemons, he eats lemons with salt on it like a apple...I don't know how he does it..I pucker up just thinking about it LOL.
