How rude! Mommy said she would take a long nap with me. Well she only did for like five minutes and then she jumped up and left me for the kitchen. She said she had to have ANOTHER piece of pumpkin pie.
Seriously? She's already had two slices today!

I interrupt Maggie's pouting to share my piece of pumpkin pie with you ...
Please ignore Maggie. You know she gets a little bent out of shape during the holidays - always wanting my undivided attention and all. I told her that it was STILL Thanksgiving weekend and I was not only savoring every moment of the occasion but wanted to savor EVERY bite of the holiday food too. ;-)
Here's the recipe ...
Pumpkin Custard Pie
1 9 inch pie shell
1 cup pumpkin puree
3 eggs
1 T all purpose flour
1/4 cup packed light brown sugar
1/2 cup white sugar
1/2 tsp salt
1/3 tsp nutmeg
1/2 tsp cinnamon
2 cups evaporated milk
Preheat oven to 375 degrees.
In large bowl comine all ingredients. Beat with a mixer until smooth. Pour into pie shell. Bake for 50-60 minutes or until set. Chill in fridge overnight and serve with whipped topping of your choice.
I prefer Cool Whip ;-)
Now I must go finish my nap with Maggie.

Yes, please do go finish your nap with Maggie, it's important to keep Maggie happy. I saw a sign yesterday that stated, "With a great deal of training, man really can be a dog's best friend." Hehe, it must be true, Maggie has you pretty well trained.

gee wheez mommie, could'nt get back to her fast enough - Bless maggie's little heart - too cute - my son's been making pumpkin pies for thanksgiving for a couple of years now and has made it a tradition and his only 12 years old, and he will diffently add this one to his recipe's thanks kim, (laz). i still feel as though i need to catch up on my sleep and take naps. i wish you a sound and restful nap - thanks again

Hi Kim,
That sounds like a good recipe to try.
My pumpkin pie is traditional but my
husband loves it so I try to make it all
winter long for him-even in Florida!
I have made so many of these pies that
I just eye ball all the spices I put in
the pie, no measuring for me.
Maggie looks so sweet in the green chair.
