Although she is feeling a wee bit tired from all of her celebrating and could hardly keep her eyes open for me to take this photo ...
I can share that it is a happy tired for my birthday girl! She loved turning 21. And my other girl is very happy too that Shannon isn't too old now to hold her on her lap.
And if Maggie is happy, well then EVERYBODY is happy.
;-)
I saved a piece of birthday cheese cake just for you too.
I use this recipe. It is really easy and because the graham cracker crust is my favorite part of cheesecake, I double those ingredients.

Do you like your cheesecake plain, as it is often described in restaurants when not topped with something fruity or saucy?
I like it plain.
But I really do NOT like the word "plain." It is, oh I don't know - plain. I think it might be my least favorite adjective. I mean honestly, what IS plain? Plain can be subjective. Plain can be beautiful. Plain can be just perfect.
Like this cheesecake.
It is rich, moist and delicious. Absolutely delicious.

I love cheesecake - here in Germany is plain cheesecake normal. You can get seldom a cheesecake with topping like fruits or juice.

Sounds like a BLESSED birthday! I love seeing my own girl with our Gracie in her arms. One of my biggest DREADS in a few years when she is off to college is the thought of Gracie without "her girl." But, now sad thoughts today ~ today it is HAPPY and CHEESECAKE! Can't wait to see the recipe. The BEST cheesecake I've ever had was PLAIN from a bakery in London. I was a senior in high school and my mom and I were there and bought some to eat during the intermission of the musical ANNIE. They wrapped it up oh so prettily ~ forks included ~ and we stepped outside during intermission and it was heavenly. We BOTH remember it to this day! May yours be JUST as sweet, today! xx P&H

I like my cheesecake unadulterated as well, but I also like it with strawberries (fresh) and real blueberry sauce, and with just a drizzle of raspberry syrup, or chocolate...oh well, you get the picture.

I love cheesecake plain too. My recipe is very similar to yours, but I add a little lemon zest. The hint of lemon makes the cake! I'll admit that I bought a cheesecake at Costco a few weeks ago and it was really good! So, in a cheesecake emergency, run to Costco!

Cheesecake is a little slice of heaven and I do prefer it without any additions, however, they are ok too! Shannon is absolutely beautiful, tired or not. I'm so glad she's had a wonderful time celebrating.

That has to be the best looking cheesecake ever! It is my weakness next to chocolate! I read your post about how you always wanted to be there for your daughter. I started to cry and my little boy and girl just looked at me funny! I had to say, "Mommy's just happy that's all." I don't think they believed me but, that was a darling post!
