I hope you had a lovely day! I certainly did! I'll tell you about it in a minute, but first I wanted to share the salad that we had tonight for dinner.
It was soooooooooo good. Oh-my-goodness-good.
If you would like to make it, you will need:
1 bag of spinach leaves
2 grilled chicken breasts (hubby smoked ours)
1 container of crumbled Gorgonzola cheese
1 bottle of Kraft Creamy Poppyseed Dressing
1 bag of pine nuts
All you do is put the spinach leaves in a big bowl. Sprinkle in as much cheese as you'd like and do the same with the pine nuts. Drizzle the dressing all over the ingredients - again to taste - and then gently toss until the leaves, cheese, and nuts are all coated. Slice up the chicken and add to the salad.
So easy, right?
Well today I went over to my friend, Yvonne's house, and took a few photos to share with you SOON.
We had so much fun - and she is excited to share her home with you.

Hard to believe that at my age I've never used Gorgonzola. We use Parmigiano-Reggiano, sliced with a potato peeler on our salads, esp spinach or arugala.
Note to self: must try Gorgonzola :-)

This is a great post, Kim! Simple and easy. I am going to make that salad tomorrow. I have everything except the dressing. It sounds so good and healthy too.

I could eat a salad everyday, I love salads and the more stuff in them the better. Unfortunately my hubby does not share that love. He likes his meat and potatoes. Thanks for sharing, I may just try it.

kim that salad looks so good! my husband calls me a RABBIT since i don"t eat meat ! only white meat of turkey and once or twice a year the white meat of chicken (have to be in the mood 1st though! ) if i need protein that bad i am hugging the peanut butter jar ! literally ! your food looks so good always ! even chicken!ha ha you are truly a honest to goodness "daisy angel" from daisy heaven ! always carol hall

I'm looking forward to seeing Yvonne's house -- I assume that's her front porch? I have the same rocker, painted red, on my front porch! But Yvonne's house paint and porch floor paint is in much better shape than ours.
Delicious salad recipe -- ummm... anything wth Gorgonzola, and you've got my vote.

yummy salad....let me share with you my fav....
Easy BBQ Chix Salad
cooked chix.....chopped ( mixed with bbq sauce)
bag lettuce
1/2 can blk beans, rinsed
1/2 can corn, drained
1/2-1 chopped tomato diced
mix all together and drizzle with ranch dressing. it's the best :)

We have this salad often- I add sliced strawberries and Granny Smith Apples- sometimes candied walnuts.
