Thank you so much, from the bottom of my heart, for your beautiful thoughts and for all that you shared with me in your emails and comments about my nine letters. My heart goes out to all of you who have loved and lost and loved and lost. Thank you for telling me about YOUR fathers and how they touched your lives. Life is fragile and bittersweet and though we are all unique and live all over the world we are kindred spirits. We love and want to be loved. And we want all those that we love to be with us forever.
Of course we do.
My Dad was far from perfect. And it was not always easy being his daughter. But I KNEW that he loved me.
That is what I hope and pray that MY children will always know.
For THEIR mother is FAR from perfect too, but I have ALWAYS loved them. Now and forever.
((((((YOU)))))))
So, how about a little blueberry treat to celebrate all of us and that we are here together.
Here is the recipe from Susannah Blake's cute little book, 500 Cakes that I recently added to my stash.
BLUEBERRY SOUR CREAM LOAF CAKE
1 1/2 sticks butter @ room temperature
generous 3/4 cup superfine sugar
2 extra large eggs
generous 3/4 cup sour cream
2 cups self-rising flour
1 tsp ground cinnamon
1 1/3 cups fresh blueberries
confectioners' sugar to dust (optional)
Preheat the oven to 350 degrees. Grease an 8 1/2 x 4 1/2 loaf pan, and line the bottom with waxed paper.
Beat together the butter and sugar until pale and creamy, then beat in the eggs one at a time. Stir in the sour cream, then sift the flour and cinnamon over the mixture and fold in. Reserve a few blueberries (about 10) to sprinkle over the top, then fold in the remaining berries. Spoon the batter into the prepared loaf pan, smoothing the top with the back of the spoon. Sprinkle the reserved berries over the batter, pressing them down.
Bake for about 1 hour and 10 minutes, or until a skewer inserted in the center comes out clean. (one hour was all mine needed) Let cool in the pan for about 10 minutes, then turn out on a wire rack to cool completely. Dust with confectioners' sugar before serving.
My friend, Cindy, gave me one of her favorite blue bowls. Wasn't that sweet of her? So I happily used my new Cindy-Bowl in her honor to prepare this recipe...
My little blueberries are all washed and ready ...
This recipe is SO easy.
And it comes out of the oven looking gorgeous and smelling yummy!
And here is a warm and gooey slice just for YOU ...
And while you munch on your cake, please know this ...
I APPRECIATE and LOVE YOU VERY MUCH.
Now and forever too.
Love,
Kim
