Now, if you love strawberries and cake, then you are going to love this recipe that I found over at Nancy's wonderful blog!! Visit her and you will read all about Lulu's Tea Room, where she enjoyed this heavenly dessert!
I made it for Shannon's birthday and my family LOVED it! It was oh-so-strawberrylicious! Here is the recipe that sweet Nancy shared:
Strawberry Coconut Cake Recipe
Ingredients
Cake:
1 1/2 boxes of white cake mix
5 eggs
2 cups water
3/4 cup oil
1/2 box of strawberry jello (3 oz. box)
1/2 cup of chopped strawberries
Icing:
16 oz sour cream
1 1/2 cup granulated sugar
1/2 box of strawberry jello (3 oz. box)
7 oz bag of sweetened flaked coconut
1/2 cup of chopped strawberries
1 (8 oz) carton of cool whip thawed
Directions
Preheat oven to 350. Mix all ingredients for cake with an electric mixer. Pour into 3 (8 or 9 inch) round baking pans that have been sprayed with cooking spray. Place in preheated oven and bake for 22 minutes. Let cake cool completely before icing.
Mix all ingredients for the icing, excluding the cool whip. Place one layer of cake on a platter and cover the top with 1/3 of the coconut mixture. Add the second layer and cover that layer with another 1/3 of the mixture. Take the remaining 1/3 mixture and add the 8 oz carton of cool whip. Add the 3rd layer and cover the entire cake with your cool whip mixture. Garnish with strawberries.

Seriously divine! This cake was SO good.

Speaking of pretty - Tomorrow I will be watching my three pretty nieces as they whirl and twirl and point and leap in their end of the year dance recital. Sweet moments, for sure.

I am definitely going to make the strawberrylicious cake! OMG over the top it looks and sounds good! I notice there would be half a box of cake mix left. Can I just mix that with some water and eat with a spoon while the cake bakes? I don't like waste :)

Oh goodness, this looks REALLY delicious! And what perfect timing. My daughter's birthday is on 6/16. One year she wanted a chocolate cake with strawberries between the layers. Another year she wanted coconut cake. This will be a perfect combination of two of her favorite things! Thanks Kim.

I have never seen a picture of a cake that, by looking at it, was almost as good as eating it in person. Until I saw that photo of that strawberry cake. I have now had my dessert and am fully satisfied. Thanks Kim!

This looks SOOO delicious! Yesterday was my husband's birthday, which will be celebrated tomorrow due to work schedules, and I asked him "what kind of cake would you like?" His answer was "Oooooohhhh, let's see....something light and white, with strawberries and maybe some coconut...." I was stumped -- where was I going to find a cake like THAT? Well, here we go! I'm off to the store to pick up all the stuff and this will be my hubby's surprise birthday cake tomorrow! Thanks for the recipe and the inspiration :-)

Made a quick trip to the grocery to buy the few ingredients I didn't have on hand -- instead of trying to measure half a box of cake mix, I used three boxes of one-layer Jiffy cake mix -- worked beautifully!!! The cake was a huge success -- thanks for sharing the recipe.

What a coincidence, we went to Lulu's Tea Room today (June 16) and had a huge slice of this cake!! It's as good as it looks! We are visiting family in Knoxville, TN and went to the tea room today. We live in Palm Coast, FL.
