I wanted to share a DELICIOUS recipe with you before I wander into the kitchen in a little bit and actually make it for lunch today. Feel free to jot down the recipe while you sip on a glass of sweet iced tea!

MRS. SULLIVAN'S HOT CHICKEN SALAD
2 cups chopped cooked chicken
2 cups chopped celery
1 cup mayonnaise
1/2 cup sharp Cheddar cheese, grated
2 teaspoons lemon juice
1/2 cup slivered almonds
Salt & freshly ground black pepper
1 cup crushed potato chips
Stir all together EXCEPT potato chips. Top with chips.
Bake in 2 quart casserole @ 450 degrees for 20 minutes or until hot and bubbly.
Serves 4
This is sooooo good. Easy peasy and yummy. I love to make this for my friends and it is always a hit. Serve this dish with hot buttered croissants, fresh juicy strawberries, and chocolate chip cake for dessert! They will be very happy!
