I wanted to share a DELICIOUS recipe with you before I wander into the kitchen in a little bit and actually make it for lunch today. Feel free to jot down the recipe while you sip on a glass of sweet iced tea!
You can find this recipe in one of my favorite cookbooks:
Savannah Collection by Martha Giddens Nesbit
MRS. SULLIVAN'S HOT CHICKEN SALAD
2 cups chopped cooked chicken
2 cups chopped celery
1 cup mayonnaise
1/2 cup sharp Cheddar cheese, grated
2 teaspoons lemon juice
1/2 cup slivered almonds
Salt & freshly ground black pepper
1 cup crushed potato chips
Stir all together EXCEPT potato chips. Top with chips.
Bake in 2 quart casserole @ 450 degrees for 20 minutes or until hot and bubbly.
Serves 4
This is sooooo good. Easy peasy and yummy. I love to make this for my friends and it is always a hit. Serve this dish with hot buttered croissants, fresh juicy strawberries, and chocolate chip cake for dessert! They will be very happy!

That sounds delicious!! I will definitely have to try that. As for sweet tea, it is my favorite!! I actually looked up the calorie content on it and was shocked to find it has 580 calories. Aurgh!! That's ok. I have been doing so much gardening I am sure I have eaten up those calories... :)

I've made this before and it is WONDERFUL! I remember the very first time a friend served it for a lady's luncheon. It was so delicious and has been in my recipe box since then, and that was a lot of years ago. Love that southern sweet tea too! Take a photo of the finished meal for us so we can drool some more on our keyboards. Love your photos Kim. They always make me feel I'm actually there in Daisy Cottage. ♥

Kim, I was by earlier and snagged this recipe and we had it for lunch today. It was a hit with my husband, but I had had so many tastes while it was cold that I got spoiled by that. It's amazing cold! I will definitely be using this recipe (minus the chips) for my chicken salads in the future. Thanks so much for the recipe!

I have a very similar recipe but I pile the chicken salad into several pie crusts instead of a casserole, top with cheese and chips and bake ...yummy .I must make it soon. I often make it for showers and serve with a crunchy oriental salad, lovely crusty bread and butter and almond tea.
