Pumpkin Cookies
1 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
2 cups flour
1 tsp soda
1 tsp cinnamon
1/2 tsp salt
Cream shortening, sugar, and pumpkin. Add egg and mix well. Add sifted dry ingredients. Drop from spoon onto cookie sheet. Bake @ 375 degrees for 10-12 minutes.
FROSTING
1 T vanilla
1 lb. powdered sugar
1 stick butter
8 oz cream cheese
Beat frosting ingredients until smooth. Frost cookies after they have cooled.
Makes about 48 cookies
It's been one of those days, but that's okay - I'm taking a batch of these cookies to a special someone tomorrow and I know that tomorrow will be a BEAUTIFUL day... and of course I'll share all about it with you.

I was just thinking about makign some cookies! those look soo good! I think I'm going to make peanut butter cookies. If I had a can of pumpkin here, id make those instead! have fun tomorrow!
